VINEYARDS LOCATION: Contrada Bifarera, Corleone (PA).

TRAINING SYSTEM: Cordon trained and spur-pruned.

NUMBER OF VINES PER HA: 4.430.

YIELD PER HECTARE: 9 tonnes.

LYING POSITION AND SOIL QUALITY: Corleone (PA): 650 m. a.s.l. Mediumtextured soils with slopes between 10% and 20%, characterized by a good clay component and located in mountain areas.

GRAPES: Insolia.

HARVEST: Manual havest: September.

PREPARATION CARES: Reduction of the yield in vineyards (green harvest) and meticulous selection of bunches perfectly sound and ripe.

VINIFICATION: After harvesting and sorting the grapes were destemmed and crushed. The technique used consists in a cold maceration of the destemmed-crusched grapes followed by a soft pressing and fermentation with selected yeast at controlled temperature. The maturation took place in stainless steel tanks for a period of four months.

BOTTLING MONTH: February.

WINE ANALYTICAL DATA: Alcohol 13% vol. – Total Acidity 5,8 gr/l – Ph 3,16.

NOTES: Pale yellow color with green highlights. It is fruity and floral with a good mineral complexity. Excellent as an aperitif or in pairing with fish courses.

IDEAL SERVING TEMPERATURE: 7°.
